This recipe right here, is honestly one of my favourite drinking eats.

lolz, yes I just said drinking eats. You know, the kind of food you want to eat when you’re drinking beers.

Because let’s face it, when a girl is drinking light beers, I don’t want to see any strawberries ok?
Give me carbs, protein & a good ol’ meal before showing me those strawberries.

If you’re a beer drinker – you totally get me.
If you drink wine – you’re probably shaking your head & looking down on me, but understand that wine is different.

I don’t drink wine too often, especially in the summer months because – well I’d rather have a cold beer in hand. When I do drink wine, fruits & light meals are always a go; it just seems to go together.

Just like how beers & taquitos go together.

Don’t get it – then you need to start drinking beers & eating taquitos.

 

Mexican Beef Taquitos Recipe by Kama Fitness

 

These taquitos aren’t your normal fully loaded of shit taquitos. They are healthy, and are good for you. They contain only extra lean beef (choose ground turkey or chicken if you want too) cheese & my taco spice. They are baked in the oven, not deep fried and are the absolute perfect comfort food for those loooong winter nights when you don’t want to leave the house.
Not used to those? Move to Toronto.

I have never been to Mexico, but honestly I can see myself eating nachos, tacos, quesadillas & taquitos all day long. I make all of the above – at home – quite often, remember?
I really need to take some time and check out Mexico….food wise…I think it’s worth a try.

Mexican Beef Taquitos

Ingredients
  1. 1 pound Extra Lean Beef
  2. 12 large Whole Grain Tortilla Wraps
  3. 2 cups Mozzarella Cheese
  4. 1/2 cup Taco Spice
Instructions
  1. Place beef in non stick frying pan and cook on medium heat until beef is fully browned. (Approx 15 minutes)
  2. When beef is almost cooked, (after 10 minutes or so) toss in taco spice and stir well.
  3. Meanwhile, while beef is cooking warm tortillas by placing a damp clean cloth between each tortilla and warm in microwave for 30 seconds. (I usually warm 4 at a time using 2 cloths)
  4. When beef is ready, pour evenly onto flat tortillas and sprinkle each tortilla evenly with cheese.
  5. Roll tortilla up as tightly as possible and place on a baking sheet. (Not allowing any taquitos to touch)
  6. Bake in oven on 350F for 15 minutes.
  7. Allow 5 minutes to cool.
Freeze for later
  1. Place baking tray in the freezer for 30 minutes then remove and place taquitos in a freezeable bag or container for future use.

The above picture actually looks like there is a sauce on the taquitos (see it?) but really, there isn’t anything more than the taco spice. I used pam spray on top of the tin foil & the beef is quite juicy….
…another reason why these babies are delish!

Most of the time I will buy 4 or 5 pounds of beef, cook it all then go on a big taquito-creating binge. This way I can create about 10 or 15 different portion sizes for Mark & I to enjoy….whenever…

Freezer food that isn’t unhealthy…or processed….
